Raw Tacos with Tomato Salsa

This is a very healthy and filling meal.  The tomato salsa gives the tacos an added kick.  Very tasty indeed!

Taco Nut Meat 
3/4-1 cup raw walnuts
cumin to taste
coriander to taste
Celtic/pink salt to taste
cayenne pepper to taste (optional)
Romaine lettuce leaves

Soak raw walnuts just until you notice them swelling.  Pour water off and let air dry by placing them on a paper towel.  Process walnuts in food processor with S-blade.  Add cumin, coriander, salt and cayenne pepper to taste.  The walnut mixture should be crumbly.  Spoon taco nut meat onto romaine lettuce leaves and top with tomato salsa or whatever topping you like.  Enjoy!





Tomato Salsa
4 large Roma tomatoes chopped/diced or whatever tomatoes you have on hand
1/2 red bell pepper diced
2-3 tablespoons of minced red onion
juice of 1 lemon
coriander or fresh cilantro (I did not have cilantro, so I used ground coriander) to taste
cumin to taste
garlic powder to taste
Celtic/pink salt to taste
cayenne pepper to taste

Mix all ingredients and serve as a topping on your taco.  Enjoy!
