Rocking Rosemary Broccoli

Rosemary broccoli rocks! Seriously, it does. I used the recipe from the Rainbow Green Live-Food Cuisine, by Garbriel Cousens, M.D. and could not resist sharing it with you.

The aroma of fresh rosemary was out of this world and the salad was delicious. A must try for those who are broccoli lovers. Put a different twist on your broccoli and make it fun.

You will need:

3 cups broccoli, chopped in florets
1/2 cup fresh olives, pitted and diced (I used what I had, kalamati)
2 cloves garlic, minced
3 tablespoon olive oil
2 1/2 tablespoon lemon juice
2 tablespoon fresh rosemary, minced
1 1/2 tablespoon Italian seasoning
1 teaspoon Celtic salt
Fresh ground black pepper to taste

Combine all ingredients in a mixing bowl and massage through broccoli. Place in a dehydrator at 145 degrees for 1/2 -1 hour to speed up the marinating process. Serve warm.

Note: If you don't have a dehydrator, just let it marinate at room temperature.
